The summer holiday is just around the corner. Summer, of course, is all about spending as much time outdoors as you possibly can, with loved ones, over delicious food! Do you want to be able to enjoy all these things without feeling guilty? Then we have good news, because we have three tasty and sugar-free recipes (desserts) that you can enjoy carefree this summer!

Sugar-free almond peach cake

You need:

  • 250 grams of oatmeal
  • 4 peaches (preferably fresh peaches, but canned ones are also allowed)
  • 4 eggs
  • 1 lemon
  • 3 tsp cinnamon
  • 2,5 tsp baking powder
  • 50 grams of almonds
  • 100 ml unsweetend almond milk
  • 10 grams of almond flakes

Preparations:

  • Preheat the oven to 180 °C and line a baking tin with baking paper.
  • Put the oats into a bowl and grind into flour.
  • Cut 2 of the 4 peaches into pieces and mash the rest with a fork.
  • Use a hand mixer to beat the eggs until fluffy.
  • Add the baking powder, oat flour, cinnamon, almond milk, a pinch of salt, and the mashed peaches to the lightly beaten eggs. Mix it all into a smooth batter.
  • Grate the lemon zest. Cut the lemon into half and squeeze the juice from one half.
  • Roughly chop the almonds.
  • Gently scoop the almonds, peach pieces, grated zest and juice of the lemon into the batter.
  • Pour the batter into the cake tin and finish with almond shavings on top. Place the cake in the oven for 55 minutes.

Tip: do you prefer a slightly sweeter cake? Then add some honey to the batter. 

Sugar- and lactose-free ice creams

You need:

  • Pure fruit juice, preferably without adde sugars (we go for sugar-free obviously)
  • Fresh fruit of your choice (e.g. strawberries, nectarine)
  • Ice cream molds

Preparations:

  • Cut the fruit of your choice into small pieces.
  • Fill the ice cream molds with fruit juice and add the small pieces of fruit.
  • Place the ice cream molds in the freezer for at least 3 hours. Carefully remove the ice creams from the molds and enjoy!

Sugar-free apple pie

You need:

  • 300 grams of spelt flour
  • 35 grams of raisins
  • 120 ml (coconut) oil
  • 2,5 tsp (whey) baking powder
  • 2 tbsp lemon juice
  • 0.5 tsp salt
  • 2 tsp cinnamon
  • 5 big apples
  • 6 dried apricots 
  • Grate from the zest of half a lemon
  • Optionally 1 tsp ginger powder & apricot jam to cover the dough
  • 22 cm springform tin

Preparations:

  • Preheat the oven to 180 °C.
  • Cut the apricots and apples into small pieces.
  • Mix the flour, the pieces of apricots, oil, baking powder, salt and any ginger powder and knead into a smooth dough. Is the dough still a bit too dry? Then add a little bit of water.
  • Grate the lemon zest.
  • Add the apple pieces, lemon juice, lemon zest, cinnamon and raisins together into a bowl and mix well.
  • Use 2/3 of the dough for the bottom and the edges of the springform.
  • Roll out the dough and line the greased springform pan. Then fill the mold with the apple mixture.
  • Roll out the remaining dough and make strings for the top of the cake.
  • Bake the apple pie in the oven for about 60 minutes until nice and golden brown.
